I learned so much during my classes at Living Light. I learned wonderful recipes and more importantly, techniques. I learned that a raw diet isn't always about a plate of salad. I learned to make cheeses and milks from nuts, and amazing raw noodles and soups and crackers and breads, raw lasagne and enchiladas and chocolate mousse to die for, and CAKE.....hmm.......cheesecake....
More importantly, I learned about people, and specifically the people around me in the classes. The people in the raw food community. The people who (unlike a rookie like me), really knew what they were doing.
I learned a lot.
Like, people literally glow when they eat mainly raw foods. Seriously.
Also, that they seem to be so clean - in their habits and in their thinking. They seem so.... good. Unlike me, (a basically cynical person), they are reasonable, and seem to be able to see the best in everyone, and just believe in goodness and light. Which comes first, the raw foods or the nice personality?
Another thing I learned is that they blend and juice a LOT of their foods. I mean, in order to get the quantities you need for health, if you just ate them conventionally, you'd be eating all day and some of the night. So I was introduced to the concept of blended greens, and vegetable juices. Till then I'd really only considered fruit juices, or perhaps tomato. These juices are GREEEEEN.
